1/2 baguette or crusty long loaf bread, sliced
3 or 4 large cloves garlic (depends on how garlicky you want it.)
1 cup diced ripe tomatoes
1/4 cup diced onion
Chopped fresh basil (optional)
Coarse salt
Extra virgin olive oil
Preheat broiler to high, (if you prefer you can also grill the bread). Place bread slices on a broiler pan and char bread on each side. Use 2 cloves of cracked garlic and rub on toasts. In a small bowl combine tomatoes, onion, basil leaves and press remaining two cloves of garlic over mixture. Add a drizzle of oil and a little coarse salt to the bowl and gently toss mixture to coat. Pile toasts around the bowl of topping. Place a spoon to scoop topping in bowl and serve.
