Ashley's Caprese Bruschetta

I INVENTED THIS ONE!!!!!!!!!!!!

Ingredients
Fresh mozzarella (the kind in a ball in the gourmet section) - for large groups I get 2
Fresh basil
2-4 ripe tomatoes (I love the kind on a vine)
long baguette (you can use french bread, but the narrow baguette is the perfect appetizer size)
olive oil, salt, pepper

Preparation
Cut the baguette into 1/2 inch pieces
Spray baguette slices with olive oil (you can drizzle, but be careful b/c you don't want it soggy)
Layer each baguette slice with one basil leaf
Next, layer each baguette with a sliver or so of mozzarella
Finally add a thin slice of tomato on top (usually it will be more like a half slice since the baguettes are small)

Bake in the oven at 350 degrees or so. Make sure to bake on a wire rack (you want the bottom of the baguette exposed so that the bread gets crunchy and crispy). I have tried broiling, but you have to watch very closely b/c the cheese browns quickly. It doesn't take too long, but when the cheese starts to melt and get soft, remove from the heat. Sprinkle with salt and pepper and serve immediately.
